Ingredients
Chicken breasts, thinly sliced
2 cups broccoli florets
1 bell pepper, thinly sliced
3 cloves garlic, minced
1 tablespoon olive oil
2 tablespoons soy sauce
1 tablespoon honey
1 teaspoon ginger, grated
Salt and pepper to taste

Preparation
Rinse the white rice under cold water. In a saucepan, combine white rice and water. Bring to a boil, then reduce heat to low, cover, and simmer for about 15-20 minutes, or until the rice is tender and water is absorbed. Remove from heat and let it sit, covered, for 5 minutes. Fluff with a fork.
While the rice is cooking, heat olive oil in a large skillet or wok over medium-high heat.
Add sliced chicken to the skillet and cook until browned and cooked through about 5-6 minutes. Season with salt and pepper.
Add broccoli, bell pepper, carrot, and minced garlic to the skillet. Stir-fry for 3-4 minutes until the vegetables are tender-crisp.
In a small bowl, mix soy sauce, honey, and grated ginger. Pour the sauce over the chicken and vegetables. Stir to coat evenly.
Continue to cook for an additional 2-3 minutes until everything is heated through.
