Ingredients

  • Chicken breasts, thinly sliced

  • 2 cups broccoli florets

  • 1 bell pepper, thinly sliced

  • 3 cloves garlic, minced

  • 1 tablespoon olive oil

  • 2 tablespoons soy sauce

  • 1 tablespoon honey

  • 1 teaspoon ginger, grated

  • Salt and pepper to taste

Preparation

  1. Rinse the white rice under cold water. In a saucepan, combine white rice and water. Bring to a boil, then reduce heat to low, cover, and simmer for about 15-20 minutes, or until the rice is tender and water is absorbed. Remove from heat and let it sit, covered, for 5 minutes. Fluff with a fork.

  2. While the rice is cooking, heat olive oil in a large skillet or wok over medium-high heat.

  3. Add sliced chicken to the skillet and cook until browned and cooked through about 5-6 minutes. Season with salt and pepper.

  4. Add broccoli, bell pepper, carrot, and minced garlic to the skillet. Stir-fry for 3-4 minutes until the vegetables are tender-crisp.

  5. In a small bowl, mix soy sauce, honey, and grated ginger. Pour the sauce over the chicken and vegetables. Stir to coat evenly.

  6. Continue to cook for an additional 2-3 minutes until everything is heated through.

  7. Adjust seasoning with salt and pepper if needed. Serve the chicken and vegetable stir-fry over cooked white rice.
