Ingredients
2 boneless, skinless chicken breasts
Salt and pepper, to taste
1 tablespoon olive oil
2 cloves garlic, minced
1/4 cup chicken broth
Juice of 1/2 lemon
Zest of 1/2 lemon
1 tablespoon unsalted butter
Fresh parsley, chopped (for garnish)
Lemon slices (for garnish)
Mixed greens, cherry tomatoes, cucumber slices (for salad)
Salad dressing of your choice
Preparation
Begin by preparing your salad. Combine mixed greens, cherry tomatoes, and cucumber slices in a bowl. Drizzle with your favourite salad dressing, toss to coat, and set aside.
Season both sides of the chicken breasts with salt and pepper.
In a skillet, heat the olive oil over medium-high heat. Add the chicken breasts and cook for 6-7 minutes per side or until golden brown and cooked through. Remove the chicken from the skillet and set aside on a plate.
In the same skillet, add the minced garlic and sauté for 1-2 minutes until fragrant.
Pour in the chicken broth, lemon juice, and lemon zest, scraping any browned bits from the bottom of the skillet.
Bring the mixture to a simmer and let it cook for 2-3 minutes to reduce slightly.
Reduce the heat to low and add the butter to the skillet, stirring until melted and well combined with the sauce.
Return the chicken breasts to the skillet, turning them to coat in the lemon garlic butter sauce.
Allow the chicken to heat through in the sauce for another 2-3 minutes.
