Ingredients

  • 100g dried pasta per person = medium (size portion

  • 1 fresh chicken breast cut into thin strips

  • 100g button mushrooms, sliced

  • 1 small head of broccoli cut into florets

  • 1 small onion peeled and chopped

  • 1 small leek roughly chopped

  • 2 cloves of garlic peeled and chopped

  • 1 small pepper, cored, seeded and chopped

  • 150ml double cream


  • 1 chicken or vegetable cube

  • Butter or oil for frying

Preparation

  1. Cook broccoli in boiling salted water for approx. 4 minutes or until tender, remove and set aside. Use the same water to cook the pasta according to the instructions on the packet. When cooked, rinse with cold water, then drain.

  2. Heat oil or butter in a non-stick frying pan and gently fry the garlic, onions, mushrooms and peppers for about 4 minutes, stirring all the time.

  3. Add the strips of chicken to the pan and brown for another 4/5 minutes.

  4. Add the stock cube, just cover with water, bring to a boil, add cream reduce heat and simmer gently for about 10/15 minutes or until the chicken is cooked.

  5. Add cooked broccoli and stir in the pasta, make sure all ingredients are piping hot before serving
